Woodcock
Easier to approach while sneaking. Earthworms can lure and feed it, but it cannot be tamed.

Sneaking closer
Hold an earthworm and sneak closer slowly. A startled woodcock may freeze in place at first. Continuing to approach closely or sprinting causes it to fly away low to the ground.
Feeding earthworms
Hold an Earthworm and right-click to feed it directly, or right-click the top of a block to release a live earthworm. An awake, unfrightened woodcock actively searches for earthworms on the ground, including ones placed by players. Feeding cannot tame or breed woodcocks.
Probing soil and collecting earthworms
After dusk, it searches damp woodland for soft soil, walking, pausing and rocking its body before probing with its long bill. Earthworms it uncovers first move around on the ground. Players can right-click with an empty hand to pick them up before the bird eats them.
Digging suitable soil with a shovel has a 20% chance to yield an earthworm. Live earthworms burrow after spending some time on soil, but will not burrow and disappear when placed on hard blocks such as stone.
